Favourite Fried Fish Tacos

I love salmon tacos with spices and they are good with beef too, but this is a bit different. It reminds me of the restaurant Wahaca. It's totally delicious.

Ingredients

For the pickled vegetables

1 red onion
1 carrot
1 red chilli
250ml white wine vinegar
Juice of a lime
1 tbsp sugar
1 tsp cumin seeds
1 tsp coriander seeds
1/2 medium cabbage (red or white)
1 bunch corriander

For the chipotle sauce

2 tbsp mayonnaise
300ml creme fraiche
1-2 tsp chipotle paste

For the rest

4-6 breaded or battered fish fillets
taco wraps
lime wedges

Method

Finely slice all the vegetables. Doing it in a food processor is great! Alternatively a mandolin or grater. 

In a small saucepan, bring to the boil the vinegar, lime juice, sugar, salt and spices. Allow to cool slightly, then pour it over the vegetables. Leave for minimum 10 minutes, but can be left overnight. 

Heat the oven to 180-200 C and pop the fish fillets in for around 20-30 minutes. Meanwhile, stir the mayonnaise and chipotle paste into the creme fraiche. 

Serve together on taco wraps and with the lime wedges. Super yum!
