Grilled aubergine platter

Ingredients
3 tbsp Greek yogurt
1 tsp sumac
½ tsp ground cumin
½ tsp smoked paprika
¼ tsp ground salt
3 slices grilled aubergine
1-2 tbsp chickpeas
5 cherry tomatoes in halves
Leaves from 2 springs of mint, torn up
1 tbsp walnut oil

Method
Smear the yogurt on a plate to use as a base. Then layer the ingredients in the order they are listed, finishing with drizzling the walnut oil over it all. 

Yum! 

Variations
Add in one of the following or substitute an ingredient from above: 
Pomegranate molasses 
Olive oil instead of walnut oil
Lemon juice and/or zest
Tahini drizzle
Grilled courgette or red pepper instead or as well as aubergine
Tzatziki instead of plain yogurt 
Garlic or garlic oil instead/as well
