Sausage and Pumpkin Casserole

Ingredients
8 good quality sausages
600g pumpkin, cubed
2 onions
3 cloves garlic
1 tin cannellini beans
2 tins tomatoes
couple sprigs fresh rosemary
couple of sprigs fresh or dried thyme
1tsp black treacle (yes, really!)
1dl white wine or vinegar

Method
Fry the sausages till brown all over. Remove and chop into thirds or quarters.
Peel the pumpkin and remove the middle with the seeds, then cut into 2cm cubes -ish. Slice the onion and fry on medium temperature till glossy and golden, then add tomatoes and wine/vinegar. Allow alcohol to evaporate, then add all other ingredients and bring to the boil. Simmer for 20-40 minutes or stick the whole thing in the oven for an hour. You may need some more liquid if it's in the oven...
