Chocolate Birthday Cake


I made this recipe up from a bunch of other recipes. Ultimately it was perfectly chocolatey, very light and also easy to slice and didn't crumble. 

Ingredients

250g caster sugar
250g unsalted butter
200g plain flour
2 tsp baking powder
50g cocoa powder
4 eggs, beaten (ca 250 g)
1.5 tsp vanilla sugar
1dl milk

Method

Cream the sugar and butter till white, light and fluffy. Add the beaten eggs a little at a time, beating well between additions. Next mix all the dry ingredients and sift these into the butter a little at a time, again beating well between additions. Finally, add the milk. 

Bake at around 175 C in two round baking tins for about 45 minutes, or until it springs back when you push it, it's soundless and a wooden stick comes out dry when prodded in. 

Once out of the oven cut one cake to make the body, the other to make the tail, using the cut-off parts from the tail for the head and legs. Decorate with buttercream icing and sweets, as shown or as you like. I found that a bit of glitter over the whole thing at the end gave a very cool finish!
