Fish soup is my favourite comfort soup and the children love it. You don't really need a recipe, but to replicate the excellent dish we had for family supper, here's a guide. Measurements are fluid depending on taste. It takes 25 minutes to make and serves 4.

Ingredients
4 carrots
4 sticks celery
2 leeks
4 medium small potatoes
2 filets white fish
2 fillets salmon
1 tsp fish sauce or a fish stock cube
2 l water
2 handfuls frozen cooked seafood. I used one of mussels and one if prawns. (optional)
Dollop of crème fraîche to serve
Method
Peel and chop the carrot, chop the celery, leeks and potatoes. Put them in a large saucepan with the water, frozen white fish and fish stock/sauce. Bring to the boil and simmer for 8 minutes.
Now stir in the frozen seafood and place the salmon on top. Continue to simmer for two minutes.
Break up the fish and serve with a dollop of crème fraîche in each portion.
