The magic is that it is light and fluffy in texture instead of the normal grainy consistency. And that is thanks to the butter beans: they make the magic.
Ingredients
1 400g tin of chickpeas
1 400g tin of butterbeans
About 3-4 tbsp tahini
Juice of 2 lemons
1.5 tsp ground cumin
1.5 tsp smoked paprika
Good slug of extra virgin olive oil
Water to taste
Method
Make sure to drain and rinse the chickpeas and butter beans really well to remove the tinned taste. Whack everything into the magimix and mix for longer than you think it's necessary. Add water if it's too dry. Experiment with adding a bit of water anyway.
Makes about 3 jam jars worth and keeps well in the fridge.
