Quinoa with fresh greens and berries

Ingredients
100g quinoa
200g broccoli 
Handful coriander
Handful parsley
40g dried mixed berries
4 spring onions
Juice of 1 lemon
Method
Boil the quinoa in 300ml water till cooked and not soggy. Steam the broccoli till tender, bit with a distinct bite. Roughly chop the herbs and sorting onions. Mix it all together and dress with lemon juice. 

Great with lamb kebabs and tzatziki! Would also be great with pomegranate seeds mixed in and/or chopped cucumber
