Salmon Salad - laksesalat

A quick and easy delicious summer main course or elaborate side dish. Perfect for a summer evening or barbecue. I had a load of fresh salmon left over after grilling a whole fish on the barbecue. This obviously adds flavour, but you can just as easily bake the salmon in a normal oven. 

Ingredients
For the salad:
400g cooked salmon
200g cooked macaroni 
200g mixed frozen vegetables
100g lightly steamed (and still crunchy) broccoli 

To garnish 
Handful of fresh dill

For the dressing
2 tbsp creme fraiche 
2 tbsp mayonnaise
1 clove garlic
Zest of ½ lemon

Method
Shake the dressing in a jam jar to make sure it's well mixed. Add lemon juice if it's too thick.

Chill all the salad ingredients. Gently break the fish and broccoli up into bitesized pieces, then carefully mix all the salad ingredients together and dress. Wetter if you prefer more dressing or drier if you don't. I was economical with the dressing. 

Garnish with chopped dill.
