Spinach and ricotta pie

A variation on the theme of the Greek spinach pie, spanakopita. This version is 100% London made and more like a quiche or a pie.

Ingredients 
1 tortilla or any other kind of wrap
200g spinach
200g ricotta cheese
2 tomatoes 
1 tbsp sesame seeds
3 spring onions
3 cloves garlic
70g gruyère cheese
2 eggs, beaten
Nutmeg
White pepper

Method
Line a round pie dish with a wrap, ensuring it goes up to the sides. 

Wilt the spinach in the microwave. 2 minutes was good in mine. Cut the spinach up a bit wity scissors. Mix in the ricotta, finely sliced spring onion, minced garlic, nutmeg, pepper, grated gruyère and sbeatwn eggs. 

Spoon/pour the mixture into the wrap in the pie tin and place finely sliced tomatoes on top. Sprinkle with sesame seeds and bake in the fan oven at 180°C for 35 minutes.
