Roast butternut squash salad

When my veg box delivery arrives, I love to just plain roast lots of veg straight away. It then keeps longer in the fridge and I can use it to quickly throw together a delicious lunch. 

Ingredients  
Some chunks roasted butternut squash 
½ tin chickpeas, rinsed in cold water
½ red chilli
Handful of corriander
½ red onion, finely chopped
75g feta cheese
Drizzle extra virgin olive oil 

Method
Mix all the ingredients and serve!
