Butternut Tajine

Based on a couple of recipes from here and there, I created this delicious Tajine. I think what made it quite so good was that the raisins have it both depth and sweetness. 

Serves 3-4.

Ingredients 
1 small butternut squash, peeled and cubed into bitesized pieces
4 onions
1 tin chickpeas
1 tin chopped tomatoes
1 tsp ground cumin
1 tsp ground coriander
1 tsp dried oregano
½ tsp chilli flakes
handful of raisins
3 cloves garlic
chunck of ginger
coconut oil for cooking

Method
Finely chop and fry the onions till soft. Meanwhile finely chop the garlic and ginger, peel and chop the butternut squash. 

Add the ginger, garlic and spices to the onion and continue to fry for a short while, then add tomatoes, oregano, raisins and chilli. Simmer till the butternut squash is soft and tender, about 20-30 minutes. Add the chickpeas and warm through. 

I served it with couscous to which I had added a crumbled vegetable stock cube and some lemon zest.
