The dressing on this is sublime. It's all about the dressing. Flavourful potatoes also go a long way here.
250g small new potatoes
100g thick cut dry cured ham
For the dressing
1tbsp wholegrain mustard
1tbsp honey
1tbsp cider vinegar
3-5tbsp olive oil
Method
Boil the potatoes till just cooked
Meanwhile, cop up the ham and make the dressing by placing all the dressing ingredients into a clean jam jar and shaking vigorously.
Chop the potato into forkfull sized pieces, or just smash them up so there are lots of creases and cracks for the dressing to soak into. Mix in the ham. Dress while still warm. Eat warm or cold. I prefer warm.
