Green Pea Hummus

This was a total experiment because I had a craving for green peas. I originally planned to make Salty Mint and Pea Salad, but then had a last-minute impulse to try something new. This made a delicious lunch! If I'd had some I would have preferred fresh mint to dried oregano, but the recipe below is what I made today. I would recommend replacing the oregano with mint or basil. Ingredients

400g frozen peas
2 heaped teaspoons tahini
3 cloves garlic
1 tbsp oregano
juice of half a lemon
large slug of olive oil
some reserved water from boiling the peas

Crumbled feta (ca. 40g) and 2 thinly sliced spring onions to garnish.

Method

Boil the peas till tender, then drain, reserving some of the water, and blitz in the blender with the other ingredients. If the consistency is too hard or too dry add some of the water you boiled the peas in. Crumble the feta on top, sprinkle the spring onion and add drizzle some additional extra virgin olive oil over. Serve warm or cold with flatbread for dipping.
