Bean Bolognese

This is about as far from a traditional Bolognese as you can get. If you're Italian look away now! 

Still here? For the rest of us it's a delicious vegan tomato sauce for pasta.  Something I strongly dislike about vegan food is when it tries to emulate non-vegan fare. Quorn, I find an absolute abomination. It's a highly processed and highly unnatural food. I do however love vegan food that owns its meat and dairy-free ethos. Why eat meat if you can have beans? Why drink milk if you can have carrot juice? You get my drift. I love beans, lentils and all the vegetables, nuts, seeds and fruits. This recipe replaces meat with beans. It doesn't pretend that the beans are meat. It just is different and it's delicious. 

Bean Bolognese on green linguine
Ingredients

2 onions, finely chopped
3-4 carrots grated or chopped
2 sticks celery chopped
1 leek (I only added this because it was knocking around)
1 400g tin of black beans
2 tins tomatoes
1 tbsp dried oregano
2-3 cloves garlic

Method

Fry the onions till translucent, then add the carrots, leek and celery and fry till soft. Add the garlic and cook through. Add the rest of the ingredients and give it all a quick boil up. Serve. Also delicious if run through the magimix. This gives it an interesting texture.
