I'm loving eating this at the moment! The recipe is a perfect lunch for one. Avocados aren't very sustainable, but pomegranates are. You win some: you lose some. It's a delicious combination.
Ingredients
Seeds from one pomegranate
Large, ripe avocado
1 tbsp e.v. olive oil
1 tbsp toasted mixed seeds
100g feta
Method
Use a spoon to get chuncks of avocado into a bowl. Crumble the feta over it, scatter the pomegranate seeds in, drizzle the olive oil over it and sprinkle the seeds on top.
