Macaroni alla Millicent

I was torn between macaroni cheese, spaghetti Bolognese, shakshuka and a bunch of other recipes. What I ended up with was delicious! 
Serves 6

Ingredients
4 onions, finely chopped
4 sticks celery, finely chopped
3 courgettes, finely chopped
2 tins tomatoes
1 chicken stock cube
1 tsp smoked paprika
1 tsp cumin
2 cloves garlic
100 g chorizo
6 eggs
250 g macaroni
200 g grated cheese

Method
Fry onions and celery till soft and golden. Add garlic, tomatoes, courgettes, choizo and spices and simmer.

Meanwhile boil and drain the macaroni.

Mix the macaroni with the sauce and transfer into an oven dish. Cover with cheese. Use a ladel to make 6 egg sized indentations and grill for 5 minutes. 

Remove from the grill. Crack an egg into each of the six hollows, sprinkle with a little extra smoked paprika, then grill for another 5 minutes till the eggs are set.
