During lockdown I wanted to make something quick, simple and delicious. Just as good in summer as in winter. Best served with sweetened cream.
100g butter
160g caster sugar
1 tsp vanilla sugar
25g granulated sugar
1 egg (beaten)
200g self-raising flour
150ml milk or cream
3 apples, diced
1½ tbsp cinnamon
Method
Heat the oven to 175°C. Line a cake tin with baking paper.
Mix the caster sugar, vanilla sugar and butter and beat till white and fluffy, then mix in the egg little by little.
Now add the milk and flour a little of each until it's all in.
Place half the mixture in the cake tin.
Now sprinkle the apple over the mixture and the mixed cinnamon and granulated sugar on top of the apple. You can substitute the sugar and cinnamon with one jar of mince meat. It's not Norwegian, but it is yummy!
Dollop the remaining mixture on top again. It does not need to be even.
Bake for around 30-45 minutes.
