While self-isolating during the Corona virus pandemic we have been making full use of the kitchen and baking our own bread. We only have white flour, but here's what we're doing (and it's delicious).
200g strong bread flour
200g white rye flour
250ml water at body temperature
1 pk yeast
1 tbsp walnut oil
1 tsp ground caraway seeds
Couple of grinds of salt
2 tsp honey
Method
Mix the flours and add the salt and caraway seeds in the blender with dough hook.
Put the honey a measuring jug. Add around 25ml boiling water to dissolve. Top up with tap water till tepid. Add the yeast and leave 10 minutes.
Pour the liquid in the blender and add the oil.
Whizz until the mixture forms a ball of dough.
Take it out and knead it for 5 minutes.
Leave to rise for 60-90 minutes.
Knead again. Place in a well greased bread tin. Do not use silicon as it will not get a proper crust.
Turn the oven to 225°C and leave to rise again for 20 minutes.
Bake for around 40 minutes.
