Beanburgers with cumin and orange zest

One of those things when there's "nothing for dinner" and I raid the store cupboard.

Ingredients

1 400g tin kidney beans
1 onion
1 large carrot
2 cloves garlic
1-2 tsp ground cumin
½ tsp cayenne pepper
2 tsp ground turmeric
2-3 tsp tahini
1 tsp grated orange zest
3 tbsp plain flour
Pinch of salt

Method

Open a tin of kidney beans and rinse them thoroughly in cold water. Now put them on to boil for 10 minutes to soften.

Meanwhile, finely chop the onion and grate the carrot. Fry these till soft, then add the orange zest, garlic and spices and cook til dry.

Add the drained beans and tahini, then mash the mixture. Now stir in the salt and flour.

Firm into patties, coat in flour and fry till crispy on the outside and firm.
