
Ingredients
3 low fat sausages
1 tin green lentils
2 large peppers (yellow, orange or red)
Garlic butter to serve
50g butter
2 cloves garlic
pinch of salt
Method
Skin the sausages into a bowl. Drain the lentils and rinse them thoroughly in a sieve or colander. Allow them to drip dry.
Slice the tops off the peppers and remove the insides and seeds. Microwave the peppers for 3 minutes till tender.
Mix the sausage meat and lentils and fill it into the peppers.
Bake on 200 for 30 minutes and serve with garlic butter on top.
