Working on a winning combination of peppers, spices and tomatoes, I came up with this delicious recipe which is quick and easy to cook. I chose turkey instead of chicken because it's lean and cheaper than chicken.
Ingredients
400g turkey breast meat
6 peppers (red, yellow and green)
3-4 onions
4-5 cloves garlic
2 tsp ground cumin
2tsp ground coriander
4tsp dried paprika
3tsp dried oregano leaves
1 superhot dried chilli
200g tinned chopped tomatoes
400g tin black beans (drained and thoroughly rinsed)
Method
Finely slice the onions, peppers and garlic.
Heat the oil in a frying pan and add the cumin, coriander and paprika, then add the turkey strips and fry quickly to seal the meat, coating the meat in the spices. Take off the heat and set aside.
Now, on a medium heat fry the onions and peppers till soft. Add the chopped garlic towards the end to ensure it doesn't burn. Now add the tomatoes and oregano as well as black beans and continue to cook till it's wet, but not lying in liquid.
Serve with grated cheddar and rice or with burritos, salsa, guacamole and cheddar. Also a side salad :)
