Ingredients
1 large aubergine
3 onions
4 cloves garlic

chopped oregano
½ tsp Worcestershire sauce
½ litre pasata
1 tin chopped tomatoes
2 mozerella balls
Grated parmesan or other hard cheese

Method
Fry onions till soft and add garlic and herbs, pour in pasata and chopped tomatoes and Worcester sauce. Allow to reduce a little. Add pepper to taste.
Meanwhile, slice the aubergine in 1cm thick slices, oil a lasagne dish and cover in aubergine, overlapping is fine. Pour sauce over and bake in oven at ca.185°C for ca. 50 minutes.
Remove from the oven, layer sliced mozerella on top and grated hard cheese, then grill till golden brown.
