Tonight I called my mum to ask how to make "that thing you used to make with leftover chicken". The answer came through - "You fry onions and mushrooms and thicken it with flour. You could add peas." Here's what I did:
Ingredients
Left over roast chicken. Maybe half?
2 leeks
1 large onion
1 packet chestnut mushrooms
1 tbsp plain flour
ca ½ pint juices from roasting chicken or chicken stock made from it
Pinch salt
2 cloves garlic
Juice of ½ lemon
Dash white wine

Method
Chop and fry onion till golden, adding a dash of water if it starts to stick.
Meanwhile slice the mushrooms and leeks. Once the onion are soft and golden toss in the leeks and mushrooms. Wait for the mushrooms to shrivel and lose their water and the leeks to start softening and smelling sweet.
Tear the chicken into bitesized, or slightly larger, pieces and add this too and heat through thoroughly. Add the finely chopped garlic.
Now sprinkle the flour and salt over and mix in. The consistency will become sticky. Once this is heated through add the liquid and wine and allow to simmer for 5-20 minutes. The lemon juice gets mixed in just before serving.

You could make this into a delicious pie, or just eat it as stew, like I did tonight. It's delicious either way. Maybe mix in some peas ;)
