Oh. My Word. This. Is. Good. It may not look like much, but the walnut and lemon pesto is devastatingly tasty. If you use normal pasta instead of courgetti then you'll want to add something green to it - spinach, parsley or basil - but this is amazingly good. I blitzed it in my coffee grinder, but a food processor or blender would do the trick too. It takes 10 minutes and serves 2.

Ingredients
For the pesto:
1 fistful of walnut pieces
1 clove garlic
20g hard cheese eg Parmesan
1 glug of olive oil
pinch of salt
couple of grates of lemon rind
juice of 1/2 lemon
For the courgetti:
2 courgettes
Method
To make the pesto put all the ingredients into a blender and blitz until it's a grainy consistency.
Finely grate the courgette using a mandolin or "courgetti" maker. Boil for a minute till cooked, then drain well and serve with the pesto.
