Steak Salad & Salsa

I don't eat much red meat at home, but when you really fancy steak then nothing else will do! I do however tend to like it as a healthy meal, rather than as comfort food. This recipe is an adaptation from an "alternative Sunday lunch" I was once served. This is delicious and peppery. Serves 2. 

For this recipe I also mixed 2 handfuls of wholegrain spelt into the salad. It gave it yet another layer of texture. Alternatively you could serve it with bread.
Ingredients
2 steaks
2 bags mixed peppery salad (eg rocket, watercress or similar)

For the salsa
18 cherry tomatoes
2 cloves garlic
1/2 red onion
1/2 red chilli
2 handfuls parsley
juice of 1 lemon
1 tbsp olive oil

Method
  • Put a frying pan on the hob to heat up. 
  • Meanwhile whizz up the salsa ingredients in a food processor or with a hand-held blender. 
  • Quickly fry the steaks on high temperature on each side till sealed. If the pan is hot enough no juice should come out. Depending on the thickness of the steak about 2-4 minutes on each side should do. 
  • Take the steak off the heat and leave to settle while you lay the salad on each plate.
  • Slice the steak into strips and place on top of the salad, now dress with the salsa.
