As usual this is a recipe of my own making. I find the lemon juice works wonders with the flavour. I've made these as Christmas presents this year and they look beautiful and taste delicious. This recipe makes around 24.

Ingredients
50g butter
50g brown sugar
50g honey
15ml milk
5ml lemon juice
75g almonds
50g dried cranberries
50g dried mixed peel
50g plain flour
100g melted dark chocolate
Method
Heat oven to 175 degrees. Melt the butter, sugar and honey in a pan. Add the milk and lemon juice, then add all other ingredients (except the chocolate) and mix well. Now put teaspoon fulls of the mixture onto a lined baking tray. Make sure they're well spaced out. Bake for around 10 minutes, or until golden. Now leave to cool on a cooling rack. Turn the oven off and pop the chocolate in a dish into the cooling oven. Return 10 minutes later and the biscuits should be cool and crisp and the chocolate melted. Spread the chocolate on the bottoms of the biscuits and leave to set.
