Spiced Poached Pears


This is a great pudding for the autumn when pears are in season. It needs to be made in advance, so is perfect for dinner parties when the hostess doesn't want to be gone from her guests for too long - lest political debate becomes too heated in her absence!

Ingredients

4 pears
800ml water
200g sugar
2 tsp vanilla sugar
cinnamon stick

Method
Peel the pears, leaving the stems in place.
Put the sugar in the pan and place over medium heat. Once the sugar starts to caramelise (go brown) add the water. Do this slowly as it will steam up very quickly. Then add the vanilla sugar and cinnamon stick. Once the liquid is boiling add the pears and simmer for 10-20 minutes till the pears are tender when pricked with a fork. Turn off and allow to cool in the liquid, then chill for 3 hours or overnight.

Serve with ice cream and a little of the caramel water - which incidentally tastes a bit like Coca-Cola!
