Almost the same as the previous recipe but no apple and this time not vegan as the mayonnaise contains an egg yolk. Pictured below with Carrot and Apple Summer Salad and Rye Crackerbread
Ingredients
2 carrots
1 small red onion
1/8 white cabbage
1 egg yolk
2 tbsp sunflower oil
1 tsp horseradish sauce
pinch of salt
Method
Place the egg yolk in a small bowl and gradually whisk in the oil (I use a hand blender) to make the mayonnaise. Mix in the horseradish sauce. Then grate the carrots and finely slice the cabbage and onion and mix all together.
