I needed this to go with my gravlaks (recipe coming shortly), but had neither white wine vinegar nor Dijon mustard in the house. This was the rather tasty result. NB you can do this by hand using a whisk, but the result is much better if you use the blender. The mayonnaise goes stiffer which is preferable in my opinion.

Ingredients
2 egg yolks
sunflower oil
1/2 tsp cider vinegar
2 tsp English mustard
sprig of dill
Method
Separate the eggs and leave the whites for another time. In a small bowl blitz the eggyolks with a blender stick and start adding the oil little by little till the mayonnaise go thick. Then add a little more and keep blending well. Stir in the vinegar and the mustard and garnish with a sprig of dill - as this is to be served with gravlaks.
