Papaya & Lime

Seldom do you come across something so truly delicious, sweet, pungent and fresh. This really couldn't be simpler. In fact I've questioned whether it qualifies to be here in the definition of "recipe". Probably not, but I've let it in anyway. This is possibly my favourite pudding ever. Thank you to Emilia for serving this to me about four years ago. I've never looked back!

Ingredients
Flesh of one ripe papaya
Juice & finely grated rind of one lime

Method
Halve the papaya and discard the seeds. Scoop out the flesh into the serving dish or dishes. Pour over the juice of the lime and the grated zest.
