Apple & Rhubarb Compote


So delicious to keep in the fridge for unexpected guests and also lovely to give away as a present. When I made this last week though it didn't last long enough to be given away or for guests to appear. This would be delicious served with the ginger variety of my fridge biscuits.

Ingredients
4 sticks rhubarb
1 apple
1 tsp vanilla sugar
200g sugar
1 tbsp water

Method
Remove the thin stringy string peel of the rhubarb and chop it roughly. Also peel, core and chop the apple. Put these in a pan with the sugars and water and slowly bring to a simmer. Simmer until the rhubarb and apple have softened and created a jammy consistency. This can be eaten hot, but is also delicious if put into jam jars and served cold, for example with yoghurt as in the picture.
