250g smoked mackerel
150g cream cheese
juice of two lemons
parsley to serve
Method
The ratio of mackerel to cheese is according to taste, but these proportions work well. Whiz them with the lemon juice in a food processor or use a hand-held blender. Chill. Chop parsley on top to serve.
This also makes a delicious filling in baked potatoes. It's great on crispbread and in sandwiches.
