When I was in Sweden this weekend I rediscovered my love for the Scandinavian Råkostsalat. This is usually a mix of grated carrot, apple and celery, but there are many variations and this is mine. It all seems very healthy - and indeed it is. It's also very easy and I think it was one of the very first dishes I ever made all alone!
I once heard somewhere that all vegetable and no fat is unhealthy, so there should be a good drizzle of olive oil. It's one of those rumours that I choose to believe. Another is that a glass of red wine a day is good for you. Whether it's true or not doesn't really come into it.

Ingredients
3 carrots
1 apple
2 sticks celery
2 knobs ginger
handful of parsley
1-8th white cabbage
Juice of 1 lemon
drizzle of olive oil
Method
Coarsely grate ingredients carrot, apple and ginger in a large bowl. Finely chop the celery and parsley and add to the bowl. Juice the lemon and dress the dish with this juice and the olive oil.

I made this last night and it was delicious! The only difficulty I had was with the apple which turned to pulp when I tried to grate it - next time I will just chop. Cecil x
ReplyDeleteOh that's brilliant! Thank you. Glad you liked it. I use Cox Orange apples and they tend to grate quite well. Anyway the flavour is still there if it turns to pulp and could make for a great dressing together with the lemon juice :)
