I made this bright and cheerful soup after cooking broccoli for Sunday lunch and completely forgetting to serve it. I think the soup was significantly better than the boiled broccoli would have been.

Ingredients
1 medium head of broccoli
1/4 cabbage
2 leeks
150g Stilton (or other hard blue cheese)
Method
Boil the vegetables till soft in just enough water to cover them. Leave to cool off a little, then use a blender or stick mixer to blend them with the water they were boiled in. If this leaves your soup too thick add some more water. Crumble in the cheese and mix well. Dead simple :)
