Here's a brilliant thing to do with children to get into a christmassy mood! I usually borrow some for the occasion. It's important to have lots of icing sugar, smarties and other sweets to decorate this house. Allow a whole afternoon for it and make sure to have fun! For the house you'll need two pieces of each shape and stick them together with melted sugar. It's best to decorate them before sticking them together! This is an old recipe, but updated by me with more spices than the original because modern tastes (read: my tastes) like things spicier.
Ingredients
250g brown sugar
280g syrup
100g butter
3 tsp ground cinnamon
3 tsp ground ginger*
4 tsp allspice
1/2 tsp ground cloves
300ml milk
1 tsp bicarbonate of soda
900g plain flour
Method
1. In a large pan melt sugar, syrup and butter till all the sugar has dissolved. Stir in the spice and then the milk and leave the mixture to cool. It's really important to leave it to cool properly or the dough will become too puffy.
2. Mix the flour and bicarbonate well, then sift most of it into the cooled mixture. Mix into a ball of dough, then cover it with a coating of the remainder of the flour and leave in the fridge overnight - or longer. The dough can also be frozen at this stage.
3. Turn out the dough and knead it. It will be very hard when you begin. Don't worry! It's best to divide it into parts and then knead them one at a time as you need them.
4. Roll out the dough to 4-6mm and use cutters for the shapes or make a house.
5. Bake them for 10minutes at 175 degrees and allow them to cool on the baking sheet before moving (or they break and bend!)
