This is fairly quick and easy to make and although it's hearty it's also thoroughly wholesome. A yummy way to get lots of vegetables. I've tried making this with a vegetable stock cube, but there's something about the chicken that just makes the whole soup so much better.
Ingredients
3 medium carrots
3 medium potatoes
3 leeks
1 chicken stock cube
Method
Slice the leeks and gently fry them in a large pan till they go golden. Meanwhile boil about 1 1/2 pints water in the kettle and roughly chop the carrots and potatoes. (I usually peel the carrots, but not the potatoes.) Now add all the other ingredients and boil for minimum 15 minutes. It will taste great immediately, or even better after a day or two in the fridge.
