Grandma's Chicken Salad

OK, so this recipe isn't strictly allowed to be on this blog because the recipe already exists. I have taken the liberty of posting it nonetheless because I've never seen the recipe and I didn't follow it! That makes perfect sense, I assure you.

Ingredients
Roast chicken (I used one leg and one breast)
1 cup boiled brown rice
3 sticks celery
1 red pepper
6-12 mushrooms
1 tin pineapple (in own juice)
small handful walnut pieces

for the dressing
Plain yoghurt
Pineapple juice
1-2 tbsp balsamic vinegar
1/2 clove garlic

Method
Boil the rice. Meanwhile chop the vegetables and roast chicken and mix. Add the pineapple pieces and walnuts.
Mix the pineapple juice from the tin with the yoghurt and add the vinegar and garlic.
Once it's cooked, run the rice under cold water to chill it and drain it well.
Add the rice to the vegetables and dress.
