Sunday Couscous Salad

I thought I had nothing for lunch this Sunday, but with 1/2 a yellow pepper, 1/2 red onion and some store-cupboard couscous such a yummy lunch for one materialised that it's ended up here. You could use any other vegetables such as broccoli, courgette, other colours of pepper etc. I thought about cooking some peas from the freezer, but decided that might be "too difficult". ...

Ingredients
Couscous - about 150g ish
1/2 red onion chopped
1/2 yellow pepper
small clove garlic
lime juice
chilli oil
coriander

Method
I made up the couscous in a bowl by pouring over some boiling water (follow the instructions on the packet if you don't know how much water). While the couscous was getting ready I chopped the red onion and yellow pepper that I found in my fridge. I also finely chopped a very small clove of garlic. By now the couscous was ready so I mixed the vegetables and blended them into the couscous with a fork. I drizzled over some chilli oil, squeezed a lime into it and threw in a tub of chopped frozen coriander. YUM!

tip - when you buy those large bunches of coriander from the shop/market stall and can't use it all then chop it up and freeze the rest in a tupperware tub. It comes in really handy on days like today.
