This week I have completely run out of money thanks to all the expenses of moving house etc. I've therefore resorted to making cheap dinners for example lots of vegetable curry, lentils and rice - but I'm not simply going to go vegetarian! Liver & bacon is dead simple to make and really inexpensive :) Comfort food deluxe when eaten with mashed potatoes. Yum.

Ingredients
300g liver
300g smoked bacon
2 onions
some flour
Worcester sauce
Garlic
Black pepper
Tomato puree
Method
Cut the bacon into chunks (I use scissors) and fry it till it starts to crispen up. Meanwhile cut the liver into chunks and coat it in flour. Remove the bacon and gently fry the liver in the bacon fat until sealed. If you overcook it it will go rubbery, so avoid at all costs!
Meanwhile cut the onion into thick slices. Remove the liver and add it to the bacon. Now gently fry the onion in the same pan on a medium temperature till soft and brown. Then return the bacon and liver to the pan. Add about 1pint water with a good dash of worcester sauce and about 10cm tomato purée. Bring to the boil and simmer till the sauce thickens and becomes glossy. Season with black pepper.
