Lemon Pickle

This is a deliciously fresh sweet and spicy lemon pickle modelled on something from Jamie Oliver, but if I may say so, greatly improved by this blogger :)  The whole process from finding the knife and lemon to serving should take max 10 minutes and the pickle can be eaten hot or cold. It keeps well in the fridge. This is a really great accompaniment to a curry.

Ingredients
Lemon
1tsp black mustard seed
1-2 dried chillies
2tsp brown sugar

Method
Chop the lemon into quarters, remove the seeds and then finely slice. Meanwhile fry the mustard seeds  till they start to pop then add the lemon and cook till it begins to become glossy. Crumble in the chillies. Then add a few tablespoons of  water and allow to boil away so the lemon is cooked through. Now add the sugar and toss the lemon so it's coated. Cook till the pickle starts to caramelise.
