Spinach Pie

This is a fabulously easy Greek pie. So few ingredients and so yummy in the light and crispy filo pastry. It can be eaten hot for supper or cold for lunch/picnic :) I had it tonight with a simple tomato salad and it's fully vegetarian for anyone wondering!

Ingredients
500g spinach (this is about three packs!)
2 eggs
200g feta
nutmeg
2 cloves garlic
100g parmesan (or other strong yellow cheese grated)
5-6 spring onions
sesame seeds to garnish
melted butter
filo pastry

Method
Blitz the spinach in the microwave till wilted.
Crumble the feta into the spinach and add the grated parmesan (I actually used Gruyere)
Add the chopped spring onions, pressed garlic and nutmeg and two beaten eggs.
Line an ovenproof dish (about 15x25cm) with three-four sheets filo pastry and make sure to brush with melted butter between the layers. Pour all the mixture in and fold the filo pasty sheets over the top and cover with another three-four sheets. Sprinkle the sesame seeds on and bake at about 170 degrees for about 30 minutes until golden brown.
