American Breakfast Pancakes


Another Sunday morning began perfectly with these pancakes. I had maple syrup, runny honey and blåbærsytetøy*. Blåbærsyletøy won hands down for the best thing to have with them! The pancakes cook very quickly. The whole process takes 20 minutes from thinking it's a good idea to make them to sitting down to eat them (and another 2 minutes till they're gone). This recipe serves two.

Update on 26th February 2011 - this recipe also works well with gluten free, wheat free flour!


Ingredients
2 medium eggs (separated)
60g self-raising flour (or flour and baking powder)
80ml milk
1 tsp sugar
sprinkle vanilla sugar
2 drops rum essence

Method
Mix flour (and baking powder) with egg yolks, milk and flavouring till smooth.
Beat egg whites till stiff.
Blend the mixture with the egg whites to form a light & airy batter.
Drop mixture onto well-oiled frying pan on medium heat.

* blåbærsyltetøy = blueberry jam :)
