Fish Pie

This is loosely based on something Claire deB once gave me. It was so yummy that I had to develop my own. This serves four hungry people and takes about 30 minutes to make and 30 minutes to bake.

Ingredients
300g mixed fish - some of it smoked - in chunks*
1 bag spinach (about 150-300g)
1 carrot finely chopped
1 onion finely chopped
3-4 sticks celery finely chopped
100g ish grated hard yellow cheese (parmesan or cheddar or something)
1 clove garlic
1 tub creme fraiche
1 tbsp mustard
1-2 eggs

For the topping
3 baking potatoes
dash of milk
plenty of butter

Method
Boil potatoes in water and add the egg/s after a few minutes. Continue to boil for 10 minutes (meanwhile start the frying below) then remove the egg and chop it. When the potatoes are soft mash them, adding the milk and butter. Also blitz the spinach in the microwave ca 2 minutes.

Meanwhile fry onion, carrots and celery till soft and golden, then add garlic, creme fraiche, mustard, cheese and spinach and stir well. Add the fish and the hard-boiled egg and transfer into a pie dish.

Cover the fish mixture with the mashed potato, putting one spoonful on at a time till you've covered the top.

Bake on 180 degrees for about 30 minutes or a little more till it's done. If you like you can grill the top for a few minutes to make it golden and crispy.

*you can use anything - cod, salmon, haddock etc.
