Miss Millie's Fridge Biscuits

The reason this one is so great is that they are fridge biscuits. You make the dough, then leave it in the fridge until you need it. You can leave them in the fridge for weeks and always have freshly baked biscuits ready 10-15 minutes after guests arrive! They are great with a cup of tea/coffee. They are also brilliant with all ice cream and puddings etc. My favourite is the lemon variant. 


Ingredients
225g plain flour,
1 tsp baking powder,
100g butter
175g caster sugar
1 tsp vanilla essence,
1 egg , beaten.


Method
1a. Sift the flour and baking powder into a mixing bowl, add sugar and rub in butter.
1b. You can add chocolate powder or spices or lemon or orange zest to the flour to flavour the biscuits.
2. Mix in the egg
3. Shape into a long roll about 5cm thick and wrap in foil
4. Leave in the fridge overnight or until you want to use it. Slice off 6mm thick slices.
5. Bake at 180 degrees for 10-15 minutes or until pale gold in colour.
