This is a salad variants of which are popular in India, Colombia and Greece! It's easy to see why. You take the available vegetables and chop and mix them. The beauty of this dish is its freshness. It's also very useful for boosting your immune system in the winter because it contains fresh garlic and onion as well as fresh citrus juice. I love it for lunch, but it's also fantastic as an accompaniment to stews and curries when you want something fresh and zingy.
Ingredients
Cucumber
Tomatoes
Red Onion
Juice of 1 lemon/lime
1 clove garlic
(optional extras: chilli, coriander, feta cheese, parsley...)
Method
Finely chop all the vegetables and garlic. Juice the lemon/lime and use this to dress the salad.
