Another great thing to do with a pumpkin :) This is the scrapings from Halloween. I'm serving this with a pea, mint and feta side dish - and basmati rice of course!
Ingredients
Innards of one pumpkin
2-3cm2 ginger (peeled)
4 cloves garlic
2 chillies (not three!)
1 heaped tsp turmeric
1 tsp ground cinnamon
1tsp ground cumin
1tsp ground corriander seed
1tsp whole cumin seeds
1 tsp mustard seeds
1 tin tomatoes
Fresh corriander
Method
Scrape out the inside of a pumpkin and keep the flesh.
Finely chop chilli, ginger and garlic, then fry these in a large pan on a medium-low heat till tender (about 5 minutes) and add the seeds.
When seeds start to pop add the ground spices and stir quickly.
Add tin of tomatoes and bring to the boil.
Add pumpkin flesh and leave to simmer for about 10-30 minutes. Then add a handful or two of chopped coriander. Do include the stalks. Keep the leaves for the top - as above.
