The gravy I made tonight is just too good to keep to myself, so here is the recipe for you to try out too.
Ingredients
2 medium onions thinly sliced
generous knob of butter
2-3 tbsp brandy
1 tbsp plain flour
1/2 pint vegetable stock made with a vege oxo cube and boiling water
Method
Gently fry onions in butter in an iron saucepan till soft and golden brown. Remove from heat and pour brandy over. Allow to warm and coat onions. Light with a match. Allow to burn, stirring when the flames look like they're about to go out. This is the fun bit. Put the lid on to ensure the flames are out when you've finished. Sprinkle the flour over the onions and stir well. Add the stock little by little until you have the most delicious thick golden brown gravy.
