This is dead simple. It may take an hour in the oven, but it takes 10 minutes to prepare. I served it today with a raw salad of grated carrot, grated apple and watercress with lemon juice and olive oil dressing. Quick and simple, tasty and healthy. What more could you ask for?!
Ingredients250-300g (one pack) smoked mackerel
2-3 large potatoes
1 medium onion
500ml milk
dollop cream
2tsp mustard
breadcrumbs
cheddar
garlic
Method
Thinly slice potatoes and onion. Butter an ovenproof dish. Layer potato slices, then onion slices, then break up the mackerel and layer that on top. Finish with another layer of potato. Mix the cream, milk and mustard and pour this mixture over the dish till the liquid is level with the top layer of potato. Cover dish with foil and bake at 220C for 30 minutes. Meanwhile mix breadcrumbs with cheese and garlic and cover the dish with these after the first 30 minutes. Return to the oven for a further 30 minutes.
