Ingredients
1 pineapple
3 tbsp light brown sugar
1/2 tsp chilli
pinch of salt
Method
Slice the pineapple into ca 1 1/2 cm slices and cut away the peel.
Place the slices on a baking tray.
Mix the sugar with chilli and salt.
Sprinkle the sugar powder over the pineapple and grill or bake until the sugar has caramelised and the pineapples look more translucent.

This is similar to something I once had from a street vendor in Kanyakumari, South India. It's delicious with a small dollop of crème fraîche, or just as it is. The sweetness of the fruit with the chilli and salt make it a perfect pudding either in the summer or as a winter warmer. It can also be served with vodka instead of cream - now you're talking!
