Fiskebollepai

Norwegians like fiskeboller and Brits like pie, so combining the two in this Anglo-Norwegian family was a no-brainer. The result was a huge success and I've been asked to blog it so we can have it again some time (the premise of this blog).

Ingredients

1 tin fiskeboller
1 fillet white fish
250g frozen shrimps
300g mixed frozen vegetables
6-8 large potatoes, fash of milk and large knob of butter
White pepper to taste
Nutmeg

75g butter
Flour to make béchamel with this
Milk to make the béchamel too

Method
Put on a large pan of water to boil the potaotes. Boil the potatoes. 

Chop the fiskeboller in half and cover the base of an ovenproof dish. Sprinkle the frozen shrimps and vegetables evenly over. 

Make the white sauce using milk. Flavour with white pepper and a little nutmeg. Add one filet of white fish and stir in. I used frozen basa fish fillets. 

Mash the potatoes, 

Pour the sauce over the fish and vegetables. Spread the mashed potato on top as a pie lid. Put a few knobs of butter on top and bake in the oven at 200°C for about 30 minutes and until golden and crispy on top. Finish off under the grill if necessary.
